LEE VACUUM PANS
Lee vacuum pans are used extensively in the processing of jams, jellies, and other concentrations such as chicken broth. By operating under vacuum conditions, evaporation can be accomplished at an efficient high rate, without subjecting the usually delicate product to damage caused by higher temperature atmospheric boiling.
Vacuum pans are available from 10 gallon through 1000 gallon with larger sizes available upon request. Vacuum pans are available in hemispherical conventional jacketed types and in dished/coned/pitched bottom Uniflow jacketed types. Lee's Uniflow jackets can be installed to the cylindrical section of the hemispherical vessels to give additional heat transfer surface.
