AVAILABLE ACCESSORIES
A typical total jam and jelly system would include premix kettles, a vacuum pan with vacuum and precondenser, vapor piping, and often a final standardization vessel. All of the equipment is sized, designed, and supplied by Lee to fit your specific processing requirements. Some available processing accessories are listed as follows:
 OUTLET VALVE: Recommended Fluid Transfer 3A/USDA approved full port flush bottom ball valve in sizes 1 ½" through 4". Also available with a variety of actuators. See Bulletin 900 and 901.
SCRAPE-SURFACE AGITATION: Lee USDA approved style No. 9M, No. 7 or No. 5 agitation can be added to the vacuum pan to prevent product burn-on and to enhance heat transfer. See Bulletin 200.
INTERNAL BOOSTER COIL: Sanitary stainless steel booster coil can be added to any vacuum pan to give additional heat transfer area for increased evaporation and for increased rolling/mixing action.
INSTREAM REFRACTOMETER: Refractometer can be added for accurate manual or continuous measurement of product concentration.
SPOON SAMPLER: Designed to easily remove small quantities of product during vacuum processing.
PRECONDENSER AND VACUUM PUMP: Shell and tube exchanger is a standard carbon steel with cast iron water bonnets and copper tubes; however, it is available as an option in stainless steel for essence recovery. Vacuum pump is cast iron, furnished with base, coupling, coupling guard, and silencer. Standard electrics are 230/460 volt, 60 cycle, 3 phase, T.E.F.C.
CONTROL PANELS: Lee also does customized control panels to meet any processing specifications. Available in stainless steel enclosures.
PRODUCT SAMPLER: Designed, using Fluid Transfer 3A/USDA approved inline ball valves, to easily remove larger quantities of product during vacuum processing.
